Spice Spice Baby Burger

This is Smoked Clubs' attempt at a Zinger-style burger. Now, we started out with the Zinger burger in mind, but what we ended up with was a burger with more depth of taste rather than just a big hit of heat. Don't be fooled though, it still packs heat.

You will need:

  • 1 Chicken breast
  • 2 tablespoons of veg oil
  • Spice Spice Baby Creole Seasoning
  • Iceberg lettuce leaves
  • 300g Panko breadcrumbs
  • 3 Large eggs (beaten)
  • Pinch of salt & pepper
 

Recipe

Step 1) Slice the chicken breast lengthways into 3 pieces. I didn't do this in my recipe until partway through, in hindsight I should have done it from the outset. Place the chicken breast in a bowl.

 

Step 2) To the chicken, add the oil and a good shake or two of Spice Spice Baby Creole Seasoning and mix together making sure the chicken is coated evenly. Leave in the fridge to marinate for an hour.

Step 3) In a bowl, beat the eggs and set them aside. Meanwhile, remove the marinated chicken from the fridge and allow it to come to room temperature.

Step 4) In separate bowls place the panko and flour, season the flour with a pinch of salt & pepper, or if you want extra spice, add a shake or two more of the Spice Spice Baby Seasoning.

 

Step 5) Take a chicken slice & coat it in the egg (if you are allergic to egg then you can substitute the egg for milk or buttermilk).

 

Step 6) Place the chicken slice into the flour to coat it, shake off the excess and repeat this process one more time.

 

Step 7) Place the chicken strip back into the egg and then into the panko breadcrumbs (I know it seems like a lot of coating, trust me though, it's worth it!) once coated, place the chicken slice to one side and repeat this process with the remaining chicken.

Step 8) Heat your fryer or dutch oven (if you are cooking outdoors) to 180C/365F and fry your chicken slice until it reaches 74C and golden brown. Leave to drain in the basket or on a piece of kitchen towel.

Step 9) Toast the inside of the brioche bun, add lettuce and place the Spice Spice Baby Chicken Burger onto the bun.

Tip: Add a teaspoon of Spice Spice baby to Mayo and the juice of a lime to make a tasty burger sauce.

You can also enjoy these as chicken strips.
