You will need
Skinless Pork loin
Streaky bacon
Mozzarella
Spinach
Smoked Club Smokey Bandit
Toothpicks
Drip pan
Recipe:
Set your pellet grill/BBQ to: (250°F/120°C), we love to use apple wood to smoke our pork but this is totally a personal choice.
Use 50/50 method if you use charcoal
Step 1) Butterfly the pork loin
Step 2) Sprinkle Smokey Bandit on the inside side of the pork loin, you can also do the outside if you want more of a kick
Step 3) Add the mozzarella and spinach
Step 4) Roll the loin
Step 5) Wrap it with bacon, use toothpicks to keep it rolled
Step 6) Cook it until the internal temp is 64C (it might take 7 hours to reach that point). You can put a drip pan below so it can catch the fat and cheese dripping
