If you are looking to spoil someone special this Valentine's day, why not treat them to an easy home-cooked treat?
All you need for this recipe is - salmon, Ruddy Good Ranch Rub, and a block of ready-made pastry (shortcrust or Puff pastry), and Natural Yogurt.
Recipe:
Step1) Add one tablespoon of Ruddy Good Ranch to 3 Tablespoons of Natural Yoghurt. Mix well and leave to stand in the fridge for 30 mins (prepare the night before for a really rich flavour).
Step 2) Cut the pastry block in half (top & bottom) Roll out your pastry of choice, we used Puff pastry but it also works well with shortcrust pastry. Make sure that each piece of rolled pastry is even in size & thickness.
Step 3) Place the salmon onto the pastry, we chose skinless salmon for this recipe but you can leave it on.
Step 4) Cover the salmon with a layer of the Ranch Rub & Yoghurt Mixture.
Step 5) Before placing the top layer of pastry over the salmon, along the edge of the pastry brush with water or a mixture of milk & egg. This will help seal the top layer of the pastry.
Step 6) Place the top layer of pastry over the salmon, making sure that there are no air gaps between the salmon & pastry, trim the edges & brush the top layer with egg/milk so it browns & gives a nice sheen once baked.
Step 7) Bake in the oven for 30-40 minutes at 180°C/356°F or until golden brown & cooked to the internal temperature - 62°C/145°F.
Serve with a side dollop of the ranch/yoghurt mix, alongside a fresh salad or veg
