Tostadas are a messy little party piece that can not be ignored. Tostadas are fried corn tortillas that are laid flat and not folded into Tacos. Tostadas & Tacos are the Flambé of the BBQ & outdoor cooking world, once you nail them, your guests will be equally entertained and impressed with the results.
We will cover the toppings within various recipe posts on this blog, the effort is well worth it. This recipe tackles how you make these crispy discs of deliciousness which we have topped with braised beef cheek to give deep, rich flavours.
Step 1) On your flat-plate or cast iron pan heat the oil, the oil needs to be deep enough to fry the corn tortilla rather than just heating it through.
Step 2) Press the corn tortilla flat, by doing this you make sure your tortilla has direct contact to as much heat & oil as possible.
Step 3) Turn a couple of times until both sides become a light golden brown, at this point you should be able to hear the crispiness when you run your spatula across the surface of the tortilla.
Step 4) Top with your favourite toppings, eating will be messy!
